This photograph of Levi Roots Caribbean cook book represents my love of healthy/not so healthy and hearty West Indian cuisine. Some of my favourite dishes include banana and honey flapjacks, coconut and thyme barbecue chicken and sweet toasted coconut.........totally delicious dining! I especially love the chicken recipes in this book, because I am a big chicken eater. Aside from the odd beef burger here and there, I don't really eat or enjoy red meat, whereas I couldn't live without chicken which can be cooked in so many tasty ways. Whilst I haven't mastered the art of cooking my own delicious meals just yet, and still largely rely on mama's/grand-mama's home cooking, I fully intend to develop my culinary skills some day soon........
